What to Expect on the Day
Ivan arrives 4–6 hours early
The spit is set up, the charcoal lit, and the beast mounted well before your guests arrive.
The fire does its work
Slow, patient cooking over Australian mallee lump charcoal. The aroma builds throughout your afternoon.
Carving at meal time
Ivan carves to order at your designated serving time. Every guest gets a proper, fresh serve.
